Spinach Stuffed Pastry
These spinach puffs are the perfect party appetizer! They’re easy to make and will impress everyone! Also, they make a great weeknight dinner served with a green salad on the side.

Ingredients:
- 1 sheet puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 egg, beaten
- Salt and pepper to taste
- Sesame seeds (optional)
Directions:
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add chopped spinach to the skillet and cook until wilted. Season with salt and pepper. Remove from heat and let cool slightly.
- Roll out puff pastry on a floured surface and cut into squares (approximately 4×4 inches).
- In a bowl, mix the cooked spinach with feta cheese.
- Place a spoonful of the spinach mixture in the center of each pastry square.
- Fold the pastry over to form triangles, sealing the edges with a fork.
- Brush the tops with beaten egg and sprinkle with sesame seeds if desired.
- Bake for 20-25 minutes, or until the pastries are golden brown.
